**Job Context:**
As a Drapers Chef, you will play a crucial role in delivering exceptional culinary experiences. You will lead the operation of food service primarily at Whitechapel, with occasional work at Mile End and Barbican locations.

**Job Purpose:**
Your role involves ensuring the highest culinary standards through effective food preparation, cooking, and service. As a mentor and leader, you will inspire and guide a kitchen team.

**Main Duties and Responsibilities:**

– Create and present high-quality food at licensed bar venues and hospitality events.
– Elevate quality, presentation, and service delivery.
– Develop and ensure consistency in food preparation and presentation.
– Collaborate with the Drapers Manager to review sales mix and enhance offerings.
– Plan and manage stock based on agreed menus and footfall projections.
– Maintain records related to procurement and maintain kitchen cleanliness.
– Recruit, mentor, and supervise Kitchen Assistants and supervisors.
– Monitor and manage staff costs within budget limits.
– Comply with HACCP, food hygiene, and health & safety regulations.
– Provide quarterly reviews of kitchen operations and recommend improvements.
– Develop food concepts and contribute to business development.
– Ensure compliance with uniform regulations for the kitchen team.

**Person Specification:**
– Essential:
– NVQ Level 2 or equivalent in Kitchen Supervision or Food Preparation.
– Food hygiene certificate or equivalent.
– Significant experience managing in a hospitality kitchen.
– Experience of developing and costing menus.
– Experience in supervising and training others.
– Ability to work unsupervised, prioritize tasks, and manage workload.
– Ability to work with staff not accustomed to kitchen environments.
– Health & safety knowledge in the kitchen.

– Desirable:
– First Aid at Work Qualification.
– Experience with customer feedback analysis and sales data.
– Ability to cost recipes within budget constraints.
– Confident user of Microsoft Word, Excel, and Outlook.
– Commercially minded with a customer-focused attitude.
– Awareness of catering trends within the industry.

– Willingness to attend training, courses, meetings, and conferences as needed.
– Enthusiastic about enhancing the student experience.
– Flexibility to accommodate event-driven work schedules.
